This agricultural department is also known for its peaceful and unspoilt countryside, pretty villages, scattered chateaux, rivers, lakes and even extinct volcanoes.By winter, Cantal's majestic mountains transform into ski-slopes and visitors can warm up in mineral rich hot springs. Meals in the region are traditionally made with basic recipes; one such dish includes the Aligot made simply with cheese and mashed potatoes. Cantal does have some impressive cities too, including Aurillac the department’s capital city. Aurillac is a lively place which has sustained its local traditions. It has a bustling market twice a week where all kinds of gastronomic and household delights, and even livestock can be purchased. The atmosphere in the medieval centre is great, often having street theatre performers. Muariac on the tip of the plateau, is one of the busiest market towns in France and many of the buildings are built in local black lava stone rocks. The City of Saint-Flour is a medieval town on the edge of the planeze plate, founded in 4 AD and named after a preacher in the area. It is known for its 14th century, gothic style Cathedral San Pedro de Saint-Flour. Inside the Cathedral is an impressive fresco and wood carvings. Despite property prices increasing quite significantly in the department in recent years the active market offers good value for money. Cantal is cheaper than other parts of Auvergne including the Haute-Loire department. Buyers have the choice between living in a town house, in one of Cantal’s charming medieval towns or in a countryside villa – there are still some renovation projects to be found in the countryside.
