L'Es Pratx restaurant near the Canal du Midi & Narbonne

L'Es Pratx is a new restaurant created by Tim and Sasha Hazael at their Chateau du Puits Es Pratx near the Canal du Midi on the D26 Ginestas, just North of Narbonne in the department of the Aude. Set in a stunningly renovated wine cave, Sasha specialises in delicious French Fusion cuisine and tailor-made food courses and wine tours are also available.

In 2003 they were introduced to the rare and beautiful Chateau du Puits es Pratx and fell in love at first sight. The vision of creating a cooking course school and restaurant became the perfect excuse to leave their successful careers in London, Tim as an advertising photographer and Sasha as a photographic food stylist working for food product development as well as advertising and magazines.

The restaurant itself is in an old wine production building (Cave) within the central hub of the Domaine, facing an outstanding enclosed courtyard bordered by stables on one side and some old staff cottages, now renovated as gites, on the other. L'Es Pratx has a stunning terrace overlooking it's own secluded vineyard to the rear of the building so that the restaurant spans across the heart of the Domaine; both inside and out are etched with the memories of times past when the Chateau was one of the biggest wine producers in the area.

Within the team at L'Es Pratx are villagers who grew up on the Domaine, or who originally worked there and are now working there again, they are the foundation of the restaurant; it is with them and their support and collaboration that the 'evolution' from the life of the Domaine has been re-born; the life has come back to the old stones. When you enter the restaurant you will immediately experience the atmosphere of time etched into the fabric of the building. The old twelve-foot wine 'foudres' and wine press have been preserved maintaining a living and developing history.

At L'Es Pratx the cuisine is based on many fusions, since the middle ages the cooking in this part of the Mediterranean in France has melded with many ingredients from around the world. French-Fusion cuisine, 'love & flavour,' it will never cease to surprise. The chef is an innovator & explorer of world cuisine, with eyes wide open to new ideas, always using fresh ingredients to create a cuisine of real integrity, inspired by the countryside of France.

L'Es Pratx is a unique restaurant where the menu is always changing with many dishes to excite your classical taste buds & eclectic dishes for the curious. The concept is to deliver the freshest, highest quality products including alternative-source ingredients in an unpretentious and relaxed ambiance.

There are a variety of changing theme evenings held at the restaurant including 'oriental cuisine with music’, and from now onwards on specific evenings, and in addition to the main menu, there will be a Tapas Menu and Jazz evening featuring UK singer/pianist Jaqueline Waugh. At L'Es Pratx Tim and Sasha can organize private dining, weddings and celebrations of many sizes and assist with carefully planning your event. Everything from menu selections, wine pairings, flowers etc. They undertook a massive renovation of the Cave building during last winter and have since accommodated eight weddings and two corporate & group activity weeks. The Cave can seat up to 120 people.

And last of all if you love cooking and want to learn new skills and discover new recipes why not enrol for one of their tailor made cooking courses, all of which are ‘hands on’ lessons, not just demonstrations on cooking techniques. The students are guided through the practical skills involved in preparation, right through to the presentation of the finished dish.

The subjects range from the always popular course based on the regional gourmet cuisine that has exciting and stimulating influences from Spain, Africa and the Far East, using local fresh fish, cheese, vegetables and meat. Others courses include ‘Fusion’ and ‘Oriental’ recipes but last season the course most in demand was titled, ‘Exciting Dinner Party Recipes’.

Many guests return home with an ability to entertain their friends with confidence using delicious and innovative recipes that Sasha showed were far simpler to create than one would imagine. She specialises in the art of presentation and principles of cordon-bleu cuisine but takes the mystique away, and makes it possible for anybody to succeed with the help of right ingredients, ‘know-how’ and passion.
