In a new series of features we will be looking at some of the ingredients popular in traditional cooking in the Limousin and South West France in general. One of the foodstuffs most often associated with France is the humble garlic bulb or ‘Ail’ so this is where we will start.

Although not immediately recognised as a wine producing region, Limousin has, from ancient times produced its own range of wines. Through periods of adverse weather and prolific diseases the production has fluctuated and at times completely disappeared but today the proud tradition of Limousin wine is alive well and going from strength to strength.

The Limousin has long been popular amongst tourists whether they are visiting the region to enjoy the great outdoors or simply stopping off in the area en route to destinations further south. Recently, a new hotel has opened in Aubusson which has become a destination in itself.

Gastronomy is not one of the area specialities, despite the fact that there are many good things to eat in this part of Limousin. There is foie gras, chestnuts, the Limousin beef and veal, fantastic mushrooms, wonderful fruit, etc but overall the restaurants do not match up to the quality of what is available.....
